白切鸡皮爽肉滑，清淡鲜美。著名的泮溪酒家白切鸡，曾获商业部优质产品金鼎奖。此外，清平鸡也是白切鸡的一种。 白切鸡又名"白斩鸡"。清代人袁枚 《随园食单》称之为白片鸡。他说："鸡功最巨，诸菜赖之，故令羽族之首，而以他禽附之，作羽族单。"单上列鸡菜数十款，用于蒸、炮、煨、卤、糟的都有，列以首位就是白片鸡，说它有"太羹元酒之味"。如今，粤菜厨坛中，鸡的菜式有200余款之多，而最为人常食不厌的正是白切鸡，原质原味，皮爽肉滑，大筵小席皆宜，深受食家青睐。
